BACKGROUND AND CONCLUSIONS OF THE III FORUM

Initial reflection.

  • Nobody doubts the importance and relevance of gastronomy in the development of quality tourism.
  • Gastronomy is the second most important reason for tourism.
  • In Aragon, a frontier land of consensus between north and south and a symbol of piece and harmony, is, of the four cultures, the most ideal place to reflect on gastronomy. Residents of the Basque Country, Catalonia, Navarre, Valencia: all of them producers and creators of globally renowned cuisine.
  • The 2009 edition comes on the back of Expo Zaragoza 2008, which confirms the foregoing, and of three completed editions of the FORUM.

Background

  • Aragon Government celebrates its X ANNIVERSARY by working on gastronomy. And it is doing so in a systemised and orderly manner.
  • It all forms part of a large strategy which began in 1999.
  • Year 1999. I Aragon Gastronomy Forum.
  • Year 2000. II Aragon Gastronomy Forum.
  • Year 2001. Creation of the Aragon Commission of Gastronomy and Catering.
  • Years 2002 – 2004. Carrying out of DAFO analysis and start of the First Edition of the Aragon Gastronomy Plan.
  • Year 2005. Development of the I Edition of the Aragon Gastronomy Plan.
  • Year 2006. Development of the II Edition of the Aragon Gastronomy Plan.
  • Year 2007. Carrying out of the III Gastronomy Forum.
  • Year 2008. Development of the III Edition of the Aragon Gastronomy Plan.

PRESENT

  • Now in 2009 we have decided to set up the IV Gastronomy Forum.
  • And we are doing so from a more comfortable position, since we now have the Aragon gastronomy map duly ordered and agreed upon.
  • We count on the support, complicity and collaboration of all the culinary agents: gastronomy academy, cooks, maitres d'hôtel, sommeliers, tapas bars. Annual collaboration agreements have been signed with them for many years.
  • And, of course, business organisations such as HORECA and the Catering Schools.
  • There are also several agreements signed with the University of Saragossa with regards to gastronomy and culinary research.
  • Moreover, all of this is backed up by the corresponding annual publications.
  • This IV Forum can be seen as the colophon, the continuation of the hugely successful III Aragon Gastronomy Plan.
